A guest wants a beer instead of a soft drink

Only dishes in the part can be chosen. Make the drink part a whole category that includes beer, with a "+" price for it, or make a second bundle with beer.

What doesn't work offline?

Connecting a new device, and anything that needs the server right then: a QR order can't reach the till, and a QR payment needs your bank to confirm. Everything else carries on.

Splitting a bill vs splitting a payment?

Split the bill makes separate bills, each with its own number and tax (for guests who each need a receipt). Split between guests at payment keeps one bill and takes several payments.

Will the kitchen get a ticket twice?

No. Waiting tickets print once. A reprint you ask for is marked REPRINT.

How often should we count?

Weekly is enough for most kitchens; daily for the few things that go missing most. The more often you count, the sooner a gap shows.

Who can connect a screen?

The owner, an admin, or a manager whose role has Manage devices. Someone else who scans it sees "Ask the owner to connect it", and nothing on the screen changes.
