The gap and food cost
The gap is what a count found against what was expected: the count before, plus what came in, less what the kitchen used and what was wasted. Food cost is what your dishes' tracked ingredients cost, against sales.
Back office Reports Stock
- Open Reports › Stock (stock is counted branch by branch: choose the branch).
- Missing shows the value that went missing since the last counts; Waste logged; Food cost as a share of sales.
- The gap lists each ingredient: Came in, Used, Wasted, Last count, Now and Gap.
- What dishes cost shows each dish: Sold, Costs, Sells and Margin.
Example
Paneer going missing
The gap shows paneer −1.8 kg this week, worth about 720. What to check: waste not logged, a delivery not received in Tillmora, or a count mistake. If none, watch the next week.
Why isn't a small gap "missing"?
Scales are never exact. Gaps within your tolerance (a few %) aren't counted as missing. Change it in Settings › Stock.
Why does a dish's cost look low?
Only tracked ingredients are in it, at their average price. Untracked ones (spices, gas) aren't.
If it goes wrong
The report says "Nothing tracked yet"
Add a few ingredients in Stock, say which dishes use them, and count once.
